
Stacy’s Nashville Hot Chicken – Chicken Salad
Fresh, bright and packed with protein. This Nashville Hot Chicken salad sandwich is a great lunch for those on the go.
Ingredients
- 2 Cups Cooked Chicken Shredded or Chopped.
- 1/4 Medium Sweet Onion
- 1 Celery Stalk
- 1/4 Cup Dried Cranberries
- 1/4 Cup Chopped Walnuts
- 1 Cup Mayo
- 2 TBSP Dijon Mustard
- 1/2 tsp Lemon Juice
- 1 tsp Tucker’s Nashville Hot Chicken
- 1/2 tsp Sugar
- Salt & Pepper To Taste
Instructions
- Shred or chop about 2 cups of cooked chicken. If the chicken has skin remove it.
- Small dice onion, cut celery length wise into four strips then thinly slice.
- Roughly chop dried cranberries and walnuts.
- Combine all ingredients in a large mixing bowl and stir until all parts are equally distributed.
- Serve on flat bread with spinach or lettuce and tomato.
