Tucker’s Favorite Burrito

Chicken, seasoned rice, black beans with your typical burrito fillers wrapped in a warm flour tortilla. That's living your best life. At least in my case, that dinner is my best life.

Ingredients
  

  • Large Flour Tortillas
  • 1 Pound Chicken breast or chicken tenderloins
  • 1/2 Medium Yellow Onion
  • 1 4 oz can Diced Green Chilis
  • 2 Cups Chicken Stock
  • 1 Cup Chicken Stock
  • 1 Cup Chicken Stock
  • 1 14 oz can Black Beans
  • 1 14 oz can Fire Roasted Diced Tomatoes
  • 1 Cup Long Grain Rice
  • 1 TBSP Tucker’s Golden Ratio
  • 1 tsp Tucker’s Pure Chipotle
  • 1 TBSP + 1tsp Tucker’s Classic Rub
  • 2 TBSP Butter
  • 1 TBSP Olive Oil
  • Cilanto
  • Sour Cream
  • Shredded Cheese

Instructions
 

  • Small Dice 1/2 of a yellow onion.
  • Heat oil in 3 quart sauce pot. Add onion and 1 TBSP of Tucker’s El Carino Seasoning. Cook for 2 minutes over medium heat.
  • Add diced green chilis and stir to incorporate. Add 2 cups chicken stock and chicken. Bring to a boil.
  • Once boiling reduce heat to simmer and allow to simmer for 30 minutes.
  • Add rice, 1 cup chicken stock, canned tomatoes, and 1 TBSP of Tucker’s Classic Rub to a medium sauce pot. Stir to combine. Bring to a boil. Simmer until rice has absorbed the liquid and is cooked through. Add Butter and fluff rice with a fork.
  • Drain and rinse beans. Add beans, Tucker’s Pure Chipotle, and 1 tsp of Tucker’s Classic Rub to a small sauce pot. Add Chicken stock and stir to combine. Bring to a boil. Reduce heat and simmer until chicken and rice are finished cooking.
  • Once Chicken is done. Shred chicken with a fork and return to cooking liquid.
  • To assemble burrito, heat shells to package instructions, add rice, beans, and chicken. Top with cheese, sour cream and cilantro.
  • Roll it up and ENJOY!
